A note from my kitchen in Bali
This is exactly what it sounds like and that’s why it works.
No layering, no technique to hide behind. Just refreshing tastiness on warm summer days and as poolside snacks or after-sauna meals.
I’ve made this before guests arrive, letting the watermelon cool just enough to sharpen its texture without turning it dull. And right before serving, the freshly squeezed lime juice goes on ... fresh, bright, cutting through the sweetness. The chopped mint follows.
It lands every time. Especially in heat.
Ingredients (serves 4)
• Half a watermelon
• Juice of 2 limes (to taste)
• 1 - 2 small stems of fresh mint
How to Make It
Step 1: Prepare
Cut the watermelon into cubes.
Step 2: Chill
Place in the fridge for up to 1 hour.
You want it cool, not cold to the point where it loses flavour.
Step 3: Finish and serve
Just before serving, squeeze over the lime juice.
Chop or tear the mint leaves and scatter on top.
