Vanilla Coconut Yogurt

A note from the kitchen

This is a very simple recipe I highly recommend you to keep ready for you breakfast and brunch guests.

I’ve used this as a base at retreats which makes guests long for more every morning - even though it is "just yoghurt", but upgraded into a more elegant variant.
People don’t necessarily ask what it is at first, they just notice that whatever sits on top tastes fuller, softer, more complete.

It’s that balance of richness and lightness that makes it work.

And once it’s in your fridge, it becomes something you reach for without thinking.

Ingredients (serves 4-6)

• 500 g Greek yogurt

• 150 g coconut cream (about ½ can)

• 1½ tbsp vanilla extract (be generous)

• Zest of ½ organic lime (optional)

How to Make It

Step 1: Combine

Add yogurt and coconut cream to a bowl.

Step 2: Blend

Stir in the vanilla until the texture turns smooth and fully combined.

Step 3: Lift (optional)

Add lemon zest for a subtle freshness that cuts through the creaminess.
